Where do I begin? That is the question that we hear all the time. People will tell us they want to eat healthier, but they don’t know where to start. Our answer generally is to start slow. (Learn more about plant-slant from our home page) Certainly you can do that. The next question is generally, What do I make? Let us help you with that. But wait a minute! There’s more. The average person/family tends to rotate around the same 6-9 meals or some variation of them. Could you take 3 of your present meals and eliminate the meat? For example, stuffed peppers are a pretty easy, healthy meal. Just eliminate the ground beef and add more of your favorite veggies to go with the rice or quinoa. How about a vegetable lasagna? You can start with just the meat elimination if you want, or you can make your own tofu ricotta (very easy) and use vegan cheeses. And lastly, how about a vegetable stir-fry. You can add tons of various veggies (think different colors) and serve them over rice, quinoa or noodles.
For your next 3 meals, let’s try substituting the meat for something more healthy. We are thinking lentil loaf or a chickpea loaf instead of meat loaf, black bean tacos instead of meat tacos and a variation of a veggie burger instead of a beef burger.
Lastly, try 3 new meals. Loaded baked potatoes is one of our favorites. You can load them up with virtually anything, but broccoli is generally one of our favorites to add to a baked potato. How about a loaded salad? You can add avocado, fruit, nuts and seeds for added nutrition and texture to a wide variety of your normal salad fixings.
